• Quinoa Salad •

 🥗Serves 2 to 4

  • 3 cups quinoa cooked in veggie broth

  • ½ cup chopped tomatoes 

  • ¾ cup diced cucumber (about ½ cucumber)

  • ¾ cup diced red, white or yellow onion (1 small onion works!)

  • ¾ chopped green or kalamata olives

  • 3 tablespoons lemon juice (about a small lemon)


🥗Directions:

  1. Cool quinoa completely and transfer to a large bowl.

  2. Add the tomato, cucumber, onion, olives and lemon juice. 

  3. Mix well.


*A yummy substitute is to add some chopped Greek pepperoncini in a place of the olives.
